Apple Cinnamon Baked Oatmeal Muffins

Finding something to eat for breakfast that doesn’t involve a trip through the Starbucks drive-through can be challenging some mornings. I’m guilty of grabbing a banana bread slice or egg bites and an almond milk matcha latte pretty often.

On Monday, I started a new workout program that involves a timed nutrition plan, which means I have to eat something every 2-3 hours to fuel my body from the intense workout. I typically eat breakfast after working out, but this program requires having something prior. So, I made a menu to meal prep for the week so I could easily have access to already cooked food in the refrigerator to save time. On the first day, I didn’t have breakfast prepped so I spent 20-30 minutes prepping breakfast when that time could have been used for eating or working out. 

This morning, I woke up extra early to prep breakfast for the week. I love having oatmeal for breakfast. I wanted to make baked oatmeal bites to grab and eat throughout the week.

This recipe is fairly easy to make and takes about 45 minutes to prepare. The muffins have a crunch on the outside with a moist inside.
The recipe calls for oatmeal, ripe bananas, diced and peeled apples, apple sauce, cinnamon, nutmeg, salt, baking powder, honey, egg, almond butter, and non-dairy milk.   

Next time I make these, I may incorporate a few add-ins like pecans and pumpkin to add to the flavor profile.

Apple Cinnamon Baked Oatmeal

 Ingredients

·       Nonstick cooking spray

·       2 large eggs, lightly beaten

·       1 tsp. pure vanilla extract

·       2 large bananas, mashed

·       1 Tbsp. honey

·       2½ cups dry old-fashioned rolled oats

·       2 Tbsp. ground cinnamon

·       1 Tbsp. nutmeg

·       1½ tsp. baking powder

·       1½ cups unsweetened almond milk

·       1 apple peeled and diced

·       1/3 applesauce, unsweetened

·       1/3 tablespoons of almond butter

·       ¼ teaspoon of salt

Instructions

1.     Preheat oven to 350° F.

2.     Prepare twelve muffin cups in a muffin tin. Spray with non-stick spray.

3.     Combine eggs, extract, bananas, honey, apple sauce, almond milk, and almond butter in a large bowl; mix well. Set aside.

4.     Combine oats, cinnamon, nutmeg, and baking powder in a medium bowl; mix well.

5.     Add oat mixture to egg mixture; mix well.

6.     Stir in diced apples.

7.     Add oatmeal mixture to individual muffin cups.

8.     Bake for 30 to 45 minutes, or until golden brown and toothpick inserted into the center comes out clean.
