Every Sunday I spend part of my day in the grocery store and at home prepping meals for the week. The one obstacle that I often encounter is coming up with ideas for what to prepare for lunch. To be honest at least two to three days out of the week I'm scramble to figure out what to eat that isn't leftovers from the night before. After doing a strong analysis of my budget last month I uncovered that the majority of my extra income is going to food. A girls gotta eat, right. This month I've challenged myself to cut my food expenses in half and focus on eating nutritious meals that are budget friendly.
Although I'm not vegan or vegetarian, but I tend to eat plant based meals often because I'm on a lactose-free diet. And as much as I love cooking sometimes having some go-to freezer-friendly nutritious lunches on hand for the days when I don't have time to spend hours in the kitchen has become a lifesaver.
