Easy Pasta Salad Recipe
For some reason, staying at home is making me have cravings for all of my childhood favorite foods. I don’t know if it’s because many of the recipes included pantry or refrigerator staples in my household growing up. Brownies, Bagel Bites, PB&J, my stomach has been asking for all of these after school treats.
Speaking of childhood memories, I have a fond memory of sitting in my yearbook class in HS and eating a pasta salad someone made for a class potluck and then going home and raving about it to my mom. We discovered the recipe came from a box and decided to try to make our own at home. It’s now one of our favorite grilling season family recipes. Today I’m sharing a quarantine version of my pasta salad recipe.

An easy pasta salad recipe using pantry staples
Ingredients:
- ½ box of dried tri-color rotini pasta
- ½ cup of California black olives, drained
- 1 red bell pepper diced
- 1 green bell pepper diced
- ¾ spinach and arugula lettuce blend
- ¾ can of garbanzo beans, drained and washed
- Dried Parsley
- Dried Basil
- Dried Oregano
- Salt
- Pepper
- ½ cup store brought zesty Italian salad dressing

How to cook Easy Pasta Salad
- 1. Cook the pasta according to the package directions. Drain and place the pasta in a large mixing bowl.
- 2. Add black olives, garbanzo beans, bell peppers, spinach blend, and spices to pasta bowl.
- 3. Add zesty Italian salad dressing to the bowl and toss the ingredients.
