Key Lime Pie

Summer pie season is officially here! With the Fourth of July just a few days away I thought this was the perfect time to share an old family favorite recipe for a Key Lime pie. Usually my Fourth of July is spent with family and friends grilling and watching fireworks. I love desserts and I haven’t been able to bake as much since my oven is still broken. To satisfy my families cravings and mine I decided to prepare this no-bake Key Lime pie. This recipe steers away a little bit from tradition because I used Greek yogurt and lime zest.
Key Lime Pie
Ingredients
Crust:
1 box of HoneyMaid Honey Graham Crackers
1 stick of melted butter
Filling:
1 ½ cup of Greek yogurt
1 can of sweetened condensed milk
1 8oz package of cream cheese
1 tsp of rum extract
1 tablespoon lime zest
6 limes, juiced
Whipped Cream
1 tsp salt
Preparation:
For the pie crust, finely grind your Honey Maid Graham Crackers in a food processor or blender. In bowl combine melted butter and graham crackers. Once the mixture has come together, neatly press into a pie pan. Place crust in the refrigerator for 20 minutes so that it can set.
While your pie crush is setting make your filling. In a large bowl, add Greek yogurt, condensed milk, cream cheese, rum extract, lime zest, and lime juice. Lightly fold all of the ingredients together.
Add filling to the pie crust and refrigerate for 2 hours or until set.
Garnish with a lime slice and add whipped cream to edges.
