Roasted Heirloom Tomato Salsa
Last week my co-worker brought us heirloom tomatoes from his small farm. I took a few and decided to make homemade salsa. For years growing up, I can remember my dad making salsa fresh from the tomatoes in his garden each summer.
I decided to mix up his recipe a little bit by roasting the tomatoes in the oven. Roasting the tomatoes with the jalapenos, garlic, and onion allows the ingredients to infuse together to create a higher flavor profile. I also added cumin and chipotle peppers to give it a smoky flavor.
After blending the mixture in my blender, I jarred it up in mason jars so I would have some for later. Making salsa at home is so easy and a lot healthier than the store brought option.
