Galentine’s Day frosted brownies
One of my favorite childhood memories from elementary school is going to my best friends house after school and her mom having freshly baked brownies and bagel bites ready for us to eat. To this day brownies are still one of my favorite desserts. They bring back childhood memories and make me think of wonderful acts of kindness. So in honor of Galentine’s Day, I’m sharing one of my favorite frosted brownie recipes.
Frosted Brownie Recipe
Brownie Ingredients
1 1/4 cups of granulated sugar
3/4 cup all purpose flour
1/3 cup unsweetened cocoa powder
1/2 cup semi sweet chocolate chips
1/4 teaspoon baking powder
Pinch of salt
1/4 cup Cashew milk
2 large eggs, lightly beaten
1/2 cup vegetable oil
1 teaspoon vanilla
1/2 bottle red food coloring
Instructions
Pre-heat oven to 325 degrees. Spray a 5x5 baking dish with cooking spray and set aside. In a large bowl, add all dry ingredients and stir them together. Add wet ingredients to a mixer and mix until smooth. After the wet Ingredients are smooth, gradually add the dry mixture to the mixer. Blend for 1 minute. The batter will be a little lumpy because of the chocolate chips. Pour batter into baking pan and bake in the oven for 45 minutes or until done in the middle.
Once the brownies are done, let them cool for an hour before working on the frosting.
How to make buttercream frosting
Buttercream frosting ingredients
3 cups Powdered Sugar (or 1 pound)
1 cup Softened Unsalted Butter
2-3 teaspoons Vanilla extract
1-2 tablespoons Cashew Milk or milk of your choice
1 tablespoon of red food coloring
Instructions
Add softened butter and vanilla to mixer. Mix until completely smooth. Now gradually add powdered sugar and beat until it’s incorporated. Add a milk gradually until you have a frosting texture. Once you start to notice the frosting consistency add the red food coloring and blend until smooth.
Once the brownies have completely cooled, frost them with the frosting and top with m&m’s.
